PROCESSING PURPLE SWEET POTATO INTO BOBINGU (BROWNIES UBI UNGU OR PURPLE SWEET POTATO BROWNIES)

Wonoroto village in Bantul district has produced various crops. One of them is purple sweet potato.  “GEUSEUBER”, one of the community groups in the Wonoroto has processed purple sweet potato into purple sweet potato chips and flour. However, Such flour gained low demand from the public due to marketing difficulties and the lack of knowledge of flour processing.

Therefore, the problems inspired YSU Community Service Program of 1013 to initiate purple sweet potato processing into a product with attractive and higher selling values to the public. The team processed the purple sweet potato into Bobingu (Brownies Ubi Ungu or Sweet Potato Brownies). The team also provided a training for women joined PKK (Pemberdayaan dan Kesejahteraan Keluarga or Empowerment and Family welfare) from Wonoroto village. The training was held on 9 and 21 August 2015.

Bobingu ingredients are 0,5 kilograms of egg, 0,5 kilograms of sugar, 2 sachets of milk, 2 sachets of vanilla powder, 0,5 kilograms wheat flour and purple sweet potato flour. For the toping, it uses cheese, peanuts, almond, sesame, etc.

Along with Bobingu, YSU Community Service Program of 1013 also introduced several special products from Wonoroto such as various peyek or a deep-fried savory Javanese cracker made from flour (usually rice flour) with other ingredients bound or coated by crispy flour batter, drinks made of purple sweet potato extract, purple sweet potato chips, and purple sweet potato flour in Monitoring and Evaluation event held by Institute of Research and Community Service, Saturday (22/08/15).
