A new variant of Tempe Sausage Hotdogs

"Hotdog is a long bun that is filled with sausage in the middle, then given vegetables or toppings according to taste. The tempeh sausage hotdog consists of hotdog bun/bread, tempeh sausage, lettuce, tomato, chili sauce, and mayonnaise sauce. I tried to localize this food into Tempe Sausage Hotdog," said Skolastika Damara Pradnyaparamitha, a student of Boga Technical Education UNY.

"Tempe sausage hotdog is suitable for teenagers or children who are malnourished or protein deficient. For target consumers, it is aimed at all circles, because tempeh sausage hotdog food has a savory taste. It can be accepted by the community and sell well in the market," said Mitha.

Mitha specifically modifies the making of the sausage using tempe puree that has been mashed together with spices mixed then mashed using a chopper, then molded using silicone sausage molds, steamed, and baked. If you want to serve the bun/bread, cut it into halves then add lettuce, tomato slices, sausage, then top it with mayonnaise and chili sauce.

"The durability of tempeh sausage hotdog can last about 1-2 days if it has been cooked and stored in the refrigerator. I recommend storing it at room temperature, it will probably last about 3-4 days. For the sausage before grilling, it will last about 3-4 days if it is steamed," she said.

This innovation was exhibited at the Culinary Innovation Festival with the theme "Tempe for Gen Z" at Sleman City Hall. Before the work was exhibited, Mitha used Research and Development (R&D) with the 4D model (define, design, develop, and disseminate).
